Lampredotto: che confusione!

Da auto-proclamato "trippaiologo", mi sento in dovere di puntualizzare ogni qualvolta leggo svarioni riguardanti la trippa, non tanto per la necessità di affermare o riaffermare una mia presunta esperienza in questo ristretto campo gastronomico, sia ben chiaro, quanto per dare il mio piccolo contributo a sfatare la fama negativa che aleggia da sempre sulla trippa, chiarendo dubbi e ridimensionando quando possibile false credenze popolari. Un'autrice che si firma The Leftover Queen (la Regina degli Avanzi), attualmente a Firenze, nel suo resoconto "Day Trips in Tuscany: Part 2: Firenze" ha scritto per esempio:
I asked Bruno what Lampredotto was, and my suspicions were confirmed, it is a dish made of the fourth stomach and intestine parts of baby calves (not to be confused with tripe, or trippa in Italian). Bummer. I am not a veal person at all for a variety of reasons, but I ended up having a part of a baby cow none the less.
Questo il mio commento di risposta sul suo blog:
A quick clarification. Lampredotto is indeed the fourth stomach of a cow (abomasum, reed tripe) but not necessarily that of baby calves. It is not intestine. Tripe, or trippa in Italian, is the generic name for all four sections of the cow stomach (including lampredotto), but mostly is used to indicate the rumen (first stomach), also called blanket tripe.
